Soybean oil content is an indicator of crude fat content in seeds, ranging from 15–25%. This trait is key for assessing the economic value of the crop and depends on the genetic characteristics of the variety and growing conditions.

To determine the oil content of soybeans, both standard chemical extraction methods and instrumental rapid methods are used, such as IR spectroscopy and pulsed NMR. A high oil content increases product yield during processing at oil extraction plants, whereas low values lead to a decrease in the purchase price of the raw material.
Fat accumulation in soybean seeds is determined by genetics, as well as weather conditions during the grain filling period, soil fertility, and the availability of mineral nutrition to the plants. An important agronomic feature is the presence of an inverse correlation between oil and protein content, which should be taken into account when choosing varieties and planning cultivation technologies.
