The test weight of durum wheat is an indicator of the mass per unit volume of grain, which determines its grade, endosperm plumpness, and semolina yield for pasta production.

For durum wheat, standard threshold values for test weight have been established depending on the grain grade: for grades 1–2, the indicator must be at least 750 g/L, for grade 3 — at least 730 g/L, and for grade 4 — at least 710 g/L. At the same time, varietal indicators range from 711 to 824 g/L.
A high test weight indicates better endosperm development in relation to the outer layers, which directly affects the processing technological process, ensuring an increased yield of high-quality semolina. The indicator is closely correlated with grain vitreousness and gluten content, while a decrease in test weight occurs due to the presence of impurities, high moisture content, or damage to the grain by the sunn pest and frost.
