The optimal development range is 15–22 °C, with deviations from these values being critical: high temperatures lead to loose and deformed heads, while low temperatures result in the 'vernalization' of seedlings and the formation of small inflorescences. The crop is vulnerable to frost: seedlings are damaged at -3 °C, and formed inflorescences at -2 °C.
