Suitability for cutting in leaf parsley is determined by the plant's ability to quickly restore its leaf apparatus from the central growth point after the removal of biomass. A variety's high value in this aspect is characterized not only by the rate of new leaf regrowth but also by the rosette's resistance to loss of marketability after multiple harvests.

The technological process involves retaining petioles 3–5 cm long to ensure continued vegetation, as removal of the growth point leads to plant death. This trait takes into account specific adaptations of leaf varieties, including leaf structure with a dense cuticle, as well as the response to agronomic factors, such as intensive irrigation and mineral nutrition after each greens harvesting cycle.

In variety trials, suitability for cutting is evaluated comprehensively based on rosette density, intervals between harvests of 40–45 days, and the preservation of the organoleptic properties of the greens. Leaf varieties are selectively adapted to regular biomass removal, unlike root varieties, in which intensive cutting significantly inhibits root development.
