The Embarque variety is cultivated primarily in the northern part of Gran Canaria island. The bulbs have a flattened shape and are covered with brown scales.
Harvesting of this variety occurs in May. Among the traditional onion varieties of the region, it is distinguished by the most pungent taste, which makes it preferred for use in stewed and fried dishes. The variety is not widely grown and is included in regional agricultural heritage conservation programs.
