TAXARA is a local variety of asparagus originating from the vicinity of the Genil River in the Spanish province of Granada. This plant is the product of many years of selection by local farmers and genetically gravitates towards wild asparagus species, which distinguishes it from industrial hybrids.
Externally, the spears of this asparagus are characterized by a greenish-violet, bronze-purple color. The product is valued for its pronounced wild aroma, tender texture, and delicate bitter aftertaste, while the tips of the spears remain fleshy and pointed.
In economic terms, this ecotype is inferior to hybrid varieties in terms of productivity, but exceeds them in the uniqueness of taste qualities and authenticity of origin.
