The variety belongs to the species Capsicum annuum L. and is widely known in scientific literature as a carrier of the specific ccs-3 mutation. This genetic trait prevents the accumulation of capsanthin and capsorubin, which are responsible for the red color of the fruits of most varieties.
As a result of the mutation, Fogo pepper fruits accumulate high concentrations of other carotenoids.
