The plant belongs to the escarole type with large rosettes consisting of overlapping leaves of an intense green color with a crunchy texture. The variety forms a dense and compact head around a short stem.

The variety is adapted for cultivation in spring and autumn periods and shows resistance to cold. The culture traditionally originates from the town of Venafro and is used in cooking, in particular in the traditional soup zuppa alla santè, as well as in fresh salads.
