The variety forms a classic escarole rosette with elongated leaves. The plant has a vegetation period of 60 to 70 days. The leaves of the variety are described as crunchy and sweet in taste; their shape makes the variety suitable for use in salad mixes.

The plant is able to withstand sudden changes in temperature conditions better than many other escarole varieties. The variety is intended for summer and winter cultivation; in official lists, it is also mentioned under the synonyms Fiorentina Verde Grossa Piena da Inverno and Regina d'Inverno.
