Di Bruxelles is a chicory variety type historically derived from old root chicory varieties. During the active growth period in the first year, the plant forms a leaf rosette 20 to 45 cm in height.

The production process consists of growing robust root crops in open field during the season and their subsequent forcing in a dark, cool place. The finished product consists of dense, crisp, and fleshy heads with a characteristic bitter taste.

The plant is demanding in terms of agricultural practices, including the need for loose soils and the prevention of water stagnation to protect root crops from rot. Since the name is a general designation of a type, characteristics may vary depending on the seed producer.
