The plant forms a rosette of long, narrow, often serrated leaves, visually resembling a monk's beard. Plant height varies from 30 to 90 cm. The variety is considered hardy and resistant to diseases, adapted for cultivation in the cool season.

The classic harvest technology requires a forcing method: roots grown in summer in open field are moved to a dark, warm, and humid room. Under these conditions, blanched leaves of light yellow or white color are formed, possessing a crispy texture and a delicate bitterness.
