The plant is a perennial crop, often cultivated as an annual or biennial. It forms a vigorous spreading rosette of leaves, reaching a height of 60–70 cm to 2 meters. The crop is demanding of fertile, warm, and well-aerated soils, and requires winter protection when grown as a perennial.

Unlike the globe artichoke (Cynara cardunculus var. scolymus), the main edible product of Kardonzen is the leaf petioles, which possess a taste with nutty or slightly bitter undertones. The name is often used as a general designation for a cardoon variety group common in the Mediterranean.
