The Matterhorn variety is used as a standard for comparison and classification of other artichoke varieties. In official technical guidelines, it is recorded as a reference sample for the evaluation of plant morphological characteristics.
The variety is characterized by a large or very large diameter of the central head, as well as a thin central leaf vein. Agronomic data, including maturity group, plant height, and disease resistance, are absent in open publications.
