The Centauro variety is distinguished by its plant architecture, forming approximately 43% more shoots and 25% more leaves than the Bellante variety. The variety's root system has a potentially greater length, exceeding that of its counterparts by 70% under experimental conditions.

The plant is used as a forage crop. The structural features of the variety contribute to increasing its palatability for animals. Under moisture deficit conditions, the variety is capable of accumulating more condensed tannins, which possess anthelmintic properties, and exhibits adaptation to arid conditions.
