The plant is tall, reaching a height of about 1.5 meters, and is characterized by dense foliage. The grains of the variety have a short or medium-short round shape about 5 mm long and 2.1 mm wide, and are characterized by a pearly white color.

The variety has a long maturation cycle and low yield compared to modern commercial counterparts. The plants are prone to lodging, sensitive to weather conditions such as September rains, and are susceptible to fungal diseases, in particular, rice blast (Pyricularia oryzae).

Due to a specific starch ratio, the grains increase in volume by 3–4 times during cooking, absorbing broth without sticking together. This makes the variety a staple ingredient for preparing classic paella and other Mediterranean dishes.
