Jucar belongs to the short-grain rice variety group. It has the ability to absorb broth well while maintaining grain integrity, which makes it sought after in Spanish cuisine.

The variety is a product of breeding aimed at increasing yields under Spanish conditions. Detailed agronomic parameters, such as maturity group, plant height, and disease resistance, are absent from open publications.
