The variety «Edel-Weiss» is a product of the breeding tradition of the Waldviertel region. The plant is classified as a dual-purpose variety, suitable for seed production and food purposes. In UPOV documentation, the variety is noted for the very strong intensity of color of certain plant parts.

The seeds of the variety have a gray color. In agrotechnical studies conducted in Austria, the variety is considered a summer crop. Breeding work with this variety is focused on compliance with food industry quality standards, including the control of alkaloid content.
