Grain quality indicators include a protein content of 12.8–16.9% and wet gluten of 25.0–35.7% with a gluten index of 60–97. The test weight of the grain is 75.0–80.5 kg/hl. Sedimentation varies from 37 to 67 ml, alveograph values from 89 to 275, flour yield is 60.2–71.5%, and water absorption is 56.1–66.8%.
