The variety was obtained as a result of crossing the variety Fresco with a line carrying introgression from wild emmer Triticum dicoccoides. The use of genetic material from a wild relative contributed to an increase in grain protein content.

Shamrock was included in the NIAB Recommended List in 1999 as a variety for bread flour production. It was used in breeding programs to develop other varieties and in scientific research as a source of genetic material for improving quality characteristics.

Morphologically, the variety is characterized by a viridescent phenotype and the absence of wax bloom, which is determined by a gene originating from Triticum dicoccoides. Commercial distribution of the variety was limited by its high susceptibility to yellow rust.
