Watzmann is a winter soft wheat (Triticum aestivum L.) variety. It is officially approved for commercial use in Germany and is included in the Descriptive Variety List (Beschreibende Sortenliste) of the Federal Plant Variety Office.
The variety was bred using traditional methods through the crossing of parent forms followed by the selection of individual spikes. The variety has successfully passed state trials for distinctness, uniformity, stability, and agricultural value.
