The variety is used in the production of semolina. Studies of dough rheological properties show that this variety forms a stronger structure compared to a number of other samples and also demonstrates high levels of dietary fiber (arabinoxylan) content.

The variety is a subject of scientific research on the antioxidant activity of the grain and its response to phytopathogens, in particular to rust. Alemanno is widely represented in Italian and international durum wheat collections.
