The variety is a classic landrace adapted to extensive and organic farming methods. It is characterized by genetic heterogeneity typical of local populations preserved in gene banks.

The grains of the variety are distinguished by their large size and high protein content. The wheat is used primarily for the production of traditional types of flour obtained by stone milling, which allows for the preservation of the specific organoleptic properties of the grain.

The variety is intended for niche production and the restoration of traditional food products. Its cultivation is officially permitted in certain regions of Greece, such as Thessaly and Central Greece, as part of a cultural heritage conservation program.
