Diminia is a landrace, not a product of modern breeding. The plant is characterized by high hardiness and reliability. Historically, the crop was used as an early-maturing 'emergency' wheat, which was sown late in the season when adverse weather conditions prevented normal sowing.

Plants of this type are characterized by a tall stem. The morphological characteristics of the ear can vary: there are varieties with both black and white awns, the latter being reflected in the descriptive suffix reste bianche.

The grain of this wheat is used for the production of stone-ground flour and is a traditional ingredient of local bread. Currently, the variety is cultivated primarily within the framework of organic farming and biodiversity conservation programs.
