Khorasan wheat is an ancient subspecies of wheat, genetically related to durum wheat. The plants are distinguished by a tall stem, reaching 180 cm. The spike is characterized by long awns, and the caryopsis is naked and reaches 8–10 mm in length.

The commercial standard for products sold under this brand requires a protein content within the range of 12–18%. The grain is used in the food industry for the production of bread, pasta, confectionery products, and in brewing.
