The Pektoral variety belongs to the species Triticum turgidum subsp. turanicum, known as Khorasan or Oriental wheat. The plant is tetraploid (2n=28, AABB genome) and is genetically close to durum wheat. The variety is characterized by high resistance to atmospheric drought and heat, but is sensitive to soil drought.

The grain of this variety is distinguished by its large size and increased protein content. The primary purpose of the variety is related to the use of its products in the pasta and cereal industry, where the grain is valued for its specific nutritional properties and organoleptic qualities characteristic of the ancient grain category.
