Garlic cultivars are divided into three main groups: early-maturing with a growing season of 80–100 days, mid-season ranging from 90 to 120 days, and late-maturing, which require more than 120 days for development. The actual duration of the period may vary depending on soil and climatic conditions and can reach up to 150 days.

A cultivar's maturity group determines the harvesting schedule, which is critical for bulb preservation.
