Winter forms of garlic are characterized by distinct cold hardiness and are adapted for planting before winter, 35–50 days prior to the onset of consistent cold weather. In most cases, they are bolting, forming a flower stalk with bulbils, and their bulbs are characterized by cloves arranged in a single layer around a central stem.

Spring forms of garlic are planted in early spring and, as a rule, are non-bolting. They possess multi-clove heads with a chaotic arrangement of cloves in several layers. These forms are less winter-hardy and have a longer growing season, but they significantly outperform winter forms in shelf life, retaining their marketable quality for up to 1.5–2 years.
