Pepper maturity groups are determined by the number of days from emergence to the phase of technical maturity, at which fruits reach their varietal size and shape but have not yet developed their characteristic color. Biological maturity, accompanied by the acquisition of the typical color and maximum flavor qualities, usually occurs 20–30 days after technical maturity.

Cultivars and hybrids are divided into very early (less than 100 days), early (101–120 days), mid-early (121–135 days), late (136–150 days), and very late (more than 150 days). The choice of group influences the planning of the seedling period and the selection of the growing region, as genetic ripening timelines can be adjusted by nutrient availability and cultivation conditions.
