These values are relative and depend on agroclimatic conditions, the method of cultivation in open or protected ground, and the plant growth habit.

In this process, the correlation between ripening time and biological properties is taken into account: early produce is often inferior to late-maturing varieties in terms of shelf life and sugar content. For mechanized harvesting, a key factor alongside the maturity group is the uniformity of fruit ripening, which is characteristic of determinate varieties.
