The ability of zucchini fruits to maintain their consumer quality after harvest, which depends on the variety, the maturity stage of the fruit, and the care taken during harvesting.

The storage life of zucchini is directly correlated with the maturity period of the variety: late-maturing forms have a significantly higher shelf life, reaching 5–6 months, compared to early-maturing fruits. In breeding practice, this trait is evaluated by the duration of the storage period until signs of spoilage appear, such as the development of gray mold, anthracnose, or black mold.
Technologically, maximum storage life is achieved by harvesting fully mature fruits while retaining a stalk 5–7 centimeters long. Mechanical damage occurring during the picking or twisting of the fruits critically reduces their storage period, as it serves as an entry point for phytopathogens.
