The processing suitability of soybeans is determined by the balance between oil extraction, the preservation of the biological value of protein, and the necessity of mandatory inactivation of antinutritional factors, such as trypsin inhibitors and urease.

A key indicator of the quality of soybean processing products is the activity of the enzyme urease. Monitoring this index allows for an assessment of the adequacy of heat treatment: excessive activity indicates incomplete inactivation of antinutritional substances, while excessively low activity indicates protein denaturation, which reduces its digestibility.

Technological assessment of raw materials includes an analysis of oil content, total protein content, amino acid composition, as well as functional properties, such as the Protein Dispersibility Index (PDI) and water-holding capacity. Unlike other oilseed crops, it is critical for soybeans to select varieties that take into account the specific requirements for the final product, whether for food-grade isolates or feed-grade cakes and meals.

Operational quality control of raw materials is ensured by NIR spectroscopy methods to assess moisture, protein, oil, and antinutritional factors without destroying the seeds. In industrial practice, the dry extrusion method is widely used for the simultaneous disruption of cell structure and inactivation of antinutritional components in feed production.
