Phaseolus vulgaris L.

Criteria for bean suitability for processing depend on the intended use: for vegetable varieties, it is the absence of a parchment layer and fibers in the pods; for grain varieties, it is the color stability during heat treatment and the culinary properties of the seed.

The suitability of dry beans for industrial canning is evaluated based on the resistance of the pigment to degradation during sterilization and changes in seed texture.
