A physiological disorder of cauliflower characterized by the formation of internal cavities in the stem (hollow stem), which begin as cracks in the stem tissues.

Hollow stem is considered one of the most significant defects in cauliflower, directly related to internal tissue cracking in the stalk. Development of these cavities is often triggered by sudden fluctuations in soil moisture, temperature variations, excessive nitrogen fertilization, and high planting density.
During cultivar testing, this disorder is recorded as a physiological disease that affects product marketability. Evaluation is performed using an intensity scale (from 1 to 5 or 9 points) or by calculating the percentage of non-standard produce, where the presence of cavities leads to a loss of curd density and the risk of secondary infections.
