Sweetness of sweet corn

Zea mays L.

A genetically determined indicator of sugar content in sweet corn kernels, measured using the Brix scale or laboratory methods. The value depends directly on the hybrid type (Su, Sh2, or Se) and the stage of maturity.

To quantitatively assess sweetness, a refractometric method using the Brix scale or gravimetric analysis is employed. The sugar level is determined by the hybrid type: standard sugary (Su) varieties contain 4–6%, while supersweet (Sh2) varieties contain more than 12%. Maximum values are reached during the milk stage, after which active conversion of sugars into starch occurs.

During production, spatial isolation from grain crops is critically important to prevent the xenia effect, which causes a reduction in sweetness. Due to the rapid loss of quality after harvest, the technological process requires efficient logistics. Despite the influence of agronomic factors, genetic potential remains the defining factor for the sweetness level of a specific hybrid.
