The suitability of lettuce for cutting is based on its ability to re-form a leaf rosette provided that the undamaged growing point located in the center of the plant is preserved. Leaf types, the morphology of which allows for the systematic removal of a portion of the vegetative mass, possess the highest suitability, whereas head lettuce varieties have limited potential and require a single-harvest approach of the entire plant.

The technological process is limited by the risk of damaging the crown, which leads to the cessation of growth. Additional factors that reduce quality include enzymatic browning of tissues at the cutting sites, caused by the activity of polyphenol oxidases, as well as the physiological transition of the plant into the bolting phase, which is accompanied by a loss of consumer properties.
