Marketability of cauliflower

The marketability of cauliflower is defined as the percentage of the mass of heads suitable for sale relative to the total harvest mass. This indicator reflects the quality of the curds, their density, compactness, and the absence of defects caused by poor agronomic practices or climatic stress.

To assess the marketability of cauliflower heads, their mass, transverse diameter, and organoleptic properties are considered: color uniformity, density, and the absence of curd breakdown. Product quality is classified according to standards that exclude specimens with sunburn, mechanical damage, traces of pests, or bracting.

High marketability indicators in the 80–90% range or higher indicate hybrid uniformity and compliance with optimal planting density, which is approximately 50–57 thousand plants/ha. A decrease in marketability below 70–80% is usually caused by curd looseness and 'fuzziness', occurring due to temperature fluctuations, lack of moisture, or delayed harvesting.
