To evaluate yield, the mass of the marketable portion of plants is measured per 1 m² in protected ground or in t/ha under field conditions. Measurements are taken at the stage of technical maturity, with head varieties accounting for the mass of the head, and leaf varieties accounting for the mass of the entire rosette of leaves, including the percentage of marketable product output.
Productivity indicators are highly dependent on cultivation technology. In spring greenhouses, the yield is 0.4–0.6 kg/m², under intensive hydroponic cultivation it reaches 2.6–3.5 kg/m² or more, while in field conditions, the average values are about 35 t/ha.
