Flavor development is closely linked to the post-harvest ripening period, which takes up to 2–3 months, during which the fruits accumulate sugars and intensify their aroma. Violations of agricultural practices, such as a lack of heat or failure to observe irrigation schedules, hinder normal development, which can lead to a lack of characteristic flavor or the appearance of bitterness due to the accumulation of cucurbitacins.
