A morphological feature of butternut squash is the localization of the seed cavity only in the enlarged lower part of the fruit, which ensures a large yield of pure pulp from the cylindrical part during industrial processing. The thin rind of the fruit significantly simplifies the process of mechanized raw material peeling.
The technological value of the species is due to its dense, buttery pulp with a low fiber content, which allows for obtaining a uniform texture in purées and soups. The fruits contain up to 11.5% sugars and a high level of carotenoids, making them a priority raw material for baby food and dessert products.
A critical stage of preparation is post-harvest ripening for 2–3 months, which is necessary for the development of organoleptic properties and the accumulation of dry matter.
