Leaf and butterhead varieties are characterized by a compact rosette, whereas Romaine-type varieties have an upright rosette, and stem lettuce is distinguished by significant stem height.

Changes in plant height serve as a technological indicator: excessive stem elongation due to unfavorable conditions or high temperatures indicates etiolation or an early transition to the flowering phase, which reduces market quality due to leaf toughening and the development of bitterness.
