Plant height is a morphological trait measured in centimeters from the soil surface to the top of the vegetative or generative organs. To ensure representativeness, measurements are taken at several points in the plot, with leaning plants raised to a vertical position; the timing of data collection is strictly regulated by variety testing protocols.

This trait is directly linked to the crop's lodging resistance: as a rule, shorter or short-stemmed forms possess increased stem strength, allowing them to better withstand high doses of mineral fertilizers and intensive agrotechnical loads. Plant height also determines harvestability, directly affecting the position of the lower fruits or pods relative to the soil level.

Variability in height depends both on the genetic characteristics of a specific variety and on growing conditions, including soil fertility, moisture availability, and plant density. Due to the lack of a universal scale for all crops, varieties are classified by height relative to specific crop standards, and agronomists are recommended to evaluate not only the mean value of the trait but also its stability under various weather conditions.
