The Zafarana Roggianese ecotype belongs to the goat horn type and is characterized by a semi-horn shape with an average fruit length of about 15 cm. Within the ecotype, two main varieties are distinguished: the long Zafarana Roggianese type and the shorter Buttunazzo Roggianese type. The taste of the fruits can range from sweet to mildly pungent.
Harvesting is carried out in early summer at a stage of maturity corresponding to the intended use. The fruits are suitable for fresh consumption; however, their main feature is the low moisture content, which allows them to be effectively dried naturally in the shade by tying them into braids or placing them on racks.
