Plants of the Catalogna chicory type form a rosette of leaves that outwardly resemble dandelion leaves. In some varieties, such as asparagus chicory, dense petioles are formed. The crop reaches a height of up to 60 cm and is distinguished by a bitter taste due to the content of glycosides.

The plant is used as a leafy vegetable: young leaves and petioles are consumed fresh or thermally processed. The type is considered versatile; some varieties are capable of overwintering in mild climates. A specific feature is the possibility of multiple leaf harvests as they regrow.
