The Rossa di Treviso type includes two main varieties. The early variety (Precoce) forms elongated, oval, dense heads 18–22 cm in height and is harvested from September to November. The late variety (Tardivo) has elongated, thin, curved leaves gathered into a fan-shaped head and requires specific blanching and forcing technology after the first frosts.
The plant possesses cold hardiness, and early forms are resistant to premature bolting. The leaves are distinguished by a crispy, juicy texture and a piquant taste with a slight bitterness. The produce is versatile in cooking: it is used fresh, for baking, grilling, and preparing sauces, risotto, and desserts.
