Plants of this type form elongated, tapered heads with an intense wine-red leaf color and a pronounced white central vein. Depending on the maturation period, two main forms are distinguished: early and late. Late forms are considered the most traditional and valuable, acquiring a crisp texture after exposure to cold.
The taste of the produce varies from moderate to pronounced bitter. The crop is traditionally grown in a cool climate and tolerates frost well. To obtain the characteristic flavor properties and appearance, the plants undergo forcing and blanching processes in running water.
This chicory is a versatile vegetable crop that is consumed fresh, and also used for roasting, grilling, and in risotto. Under the general name, seeds of various breeding lines adapted to this type may be sold.
