The name Fiorentino is traditionally used as a synonym for the variety Bourjassotte noire, the history of which dates back to the 17th century. The tree is vigorous and fast-growing, belongs to single-crop varieties, and ripens in September.

The fruits are medium-sized, about 70–80 g, and have a characteristic flattened shape without a pronounced neck. The firm skin is black or dark purple, and the flesh is distinguished by a high sugar content and aroma.

The variety is self-fertile, but the presence of pollination by Blastophaga can increase yield. The plant has moderate resistance to humidity; the fruits may crack under excess moisture. The variety is versatile and suitable for fresh consumption and drying.
