The barley variety Carambole is a product of the breeding program of the company Sejet Planteforædling I/S. The pedigree of the variety includes a combination of the genotypes Audrey x (Rosalina x Conchita).

The variety is included in official descriptive lists as spring barley and underwent state testing in Denmark in 2010–2011. Detailed agronomic characteristics of the plant are not publicly available.
