Kasseler Strünkchen is a regional variety from Northern Hesse, which is classified as a type of romaine lettuce, yet exhibits characteristics inherent to asparagus lettuce. The plant reaches a height of 50–60 cm and has a stem diameter of 2 to 7 cm. The grey-green leaves are characterized by their softness, pointed shape, and a distinct reddish tint on the edges.
The variety is dual-purpose: the young leaves are consumed at the beginning of growth, and the fleshy stem is consumed upon reaching the bolting phase. The stems require peeling and culinary processing, and their taste resembles asparagus or cauliflower. The variety is considered a reliable, heirloom vegetable cultivar used primarily in home gardens.
