Lentillon Rose d'Hiver is an ancient landrace variety intended for autumn sowing. The plant possesses high winter hardiness, withstanding temperatures down to -17°C. Stem height ranges from 50 to 80 cm, and the growth habit varies from erect to prostrate.
Due to a tendency for lodging, the variety is traditionally cultivated in a mixture with rye, which serves as a support. The crop prefers well-drained calcareous soils and does not tolerate waterlogging. The variety is susceptible to typical legume diseases, such as anthracnose, sclerotiniosis, and rust.
The seeds are characterized by a delicate sweetish taste and a tender texture. A feature of the variety is that, during cooking, the seeds remain whole and do not fall apart.
