The Sucu variety is a local Asturian variety used in cider production. It belongs to the acid technological group; composition indicators include an acidity of 4.72 g/l H2SO4 and a phenol content of 1.36 g/l tannic acid.

The variety is characterized by a very late flowering period and ripening in the third ten-day period of November. Yield is assessed as low; resistance to fungal diseases is characterized as medium or low.
